Slow seared beef mince with spicy vegetables served on bed of Penne pasta

I'm back with another Foody post and sure why not. I love my food, so why not share the odd recipe with you all. You will notice some simarities here, ingredients wise compared to my last dish, as I tend to just look into the fridge and food presses and just improvise. I only follow Ingredients when I'm having a go at something fancy like Beef Wellington. So let's go then...

Slow seared beef mince with spicy vegetables served on bed of Penne pasta

Ingredients

500 grams beef mince
1 large yellow pepper
1 large onion
10 medium sized mushrooms
1 head of broccoli
2 red chillis or chilli paste
1 tin chopped tomatoes
vegetable oil
3 garlic cloves
Penne Pasta
Cheddar cheese

STEP 1 - Add the brocolli to boiling water and simmer for 5 minutes. Now stick on your multitasking hat and crack on with steps 2 to 7 below while the carrots and broccoli are cooking away. Now is also a good time to cook your Penne pasta for later.

STEP 2 - Chop your garlic finely or use a garlic press if you have one. Chop your red chillies finely. Use a big pan or Wok, as there is lots of veg going in here.

STEP 3 - Heat approx 1 tablespoon of vegetable oil in a large saucepan over a medium heat and fry your choppped chilli and garlic for 2 minutes. Add your finely chopped red onion at this stage.

STEP 4 - Time to brown the mince now and be sure to get it in quick so that it can soak up the garlic and chilli flavours. I always like to get these flavours early and let them infuse into the meat.

STEP 5 - Allow the beef to brown and keep mixing it up to help it along. Around 5 minutes should do the job. Add a shake of salt and pepper.

STEP 6 - Add your chopped yellow peppers and mix around for 3 minutes.

STEP 7 - Now is a good time to add your choppped tomatoes.

STEP 8 - Your brocolli should be finished now and we can add it to the wok at this stage.

STEP 9 - Now add the rest of the chopped tomatoes and mix it all togther.

STEP 9 - Your pasta should be ready by now. Spoon some of the juices out and mix it into your pasta after you've drainedboff the water.

Your pasta should now be covered with tasty juices.

STEP 9 - Add your dish to a bed of pasta and grate some cheese over the top and allow it to melt, before enjoying with a nice glass of red wine or a glass of cold water
