Birch Sap Gathering

Birch juice, also known as birch sap, is typically collected in the spring during sap season.

Early in the season, a hole is drilled approximately 3 cm deep into the trunk of the birch tree. Then, a straw is placed into the hole, and a bottle is hung from the straw. As the temperature begins to warm, the sap will slowly drip into the bottle.

This birch juice is clear, lightly sweet and tart, and full of nutrients. It can be consumed fresh or boiled down into syrup or a concentrate form.

Today as usual I collected some birch sap, see on the pictures above.
