❄️ Snow Fungus & Tamarind Juice Salad πŸ₯— An Ital Recipe For Veganuary 🌱

I didn't post a vegan recipe a long time already because we moved to a new apartment, so busy. But today I am back again with my new Ital recipe, it's white jelly mushroom salad.

Google Lens tell me this mushroom English name is snow fungus, snow ear, silver ear fungus, or white jelly mushroom. In my country we call it "white mouse ear mushroom". I buy it in the China store before we leave our old place.

I thought a few days ago - what food will I make with them? I know how to make two recipes already but I want to make a new and different one. This salad I made to eat my first time and to share with you all.

Ingredients

  • 1/2 snow fungus
  • 1/3 cup soy chunks
  • 1 cucumber
  • roasted peanuts as you like
  • 1 tbsp fresh coriander leaves
  • crush roasted chilies as you eat
  • 2 cloves garlic
  • 3 tbsp tamarind juice or taste
  • 1 tsp sesame oil
  • 1/2 tsp salt or to taste
  • 1 tbsp + 1 tsp brown sugar
  • 1 tbsp soy sauce
  • 1 tbsp cassava flour
  • 3 tbsp water

Soak snow fungus in cold water 10 minutes until soft, then boil it one minute, and wash it in the cool water one more time. Cut and take away its stem and cut it small or as you like.

Soak soy chunks in a glass of water 10 minutes, after take it from the water, then fry it until crunchy. Cut cucumber like small and chop garlic

Step 1

Heat oil fry garlic a little, put sugar, soy sauce, sesame oil, salt, tamarind juice, crushed chili, stir it and take cassava flour put water stir it until dissolve and put in pan, stir.

Taste it’s ready.

Step 2

Then put snow fungus in the bowl and add add fried sauce and mix together.

Step 3

Then put cucumber and mix up again.

Then put soy chunks, peanuts, and coriander leaves, mix together to taste, it's ready.
