All kinds of beans are expensive here in Suriname, so I don’t cook beans so much in my food, but chef Justin really loves cooking foods with beans. This week for the Plant Power Cooking Challenge | Week #9, we can use any kind of legumes, so I want to make this entry with everyone too.

This is made from simple ingredients and it's easy an recipe to prepare. It is so delicious with hot tea, I really love them together. I made these to eat in the afternoon on Sunday, it’s very special treat during the lockdown days.

αžœαž·αž’αžΈαž’αŸ’αžœαžΎαž“αŸ†αžŸαžŽαŸ’αžŠαŸ‚αž€αž”αžΆαž™

Ingredients

  • 250g split mung beans
  • 1 cup coconut milk
  • 1/3 cup brown sugar or taste
  • 1 tsp salt
  • 2 tbsp coconut oil
  • roasted sesame seeds as you like

Soak mung beans in the water 3 hours or more.

Wash them and boil them with 1 cup of water until cooked. After cooked keep them until cool, then grind with coconut milk well.

Put it in the pan and add salt, sugar, and turn on the stove and stir a lot until dry, then and add oil and stir it well. It’s ready.

If you have vanilla you can add a little also. I don’t use it because I do not have it at home and we can’t go outside to buy it because it’s lockdown.

Then spread a little bit of oil in a plate and put the beans in that plate and smooth it. Then add sesame seeds on the top.

After use banana leaves or plastic to keep it from being too sticky like that. Keep it until cool, about one hour. After we cut it like you see.
