🍝 Khao Soi | A Thai/Laotian Dish 🌢️🌽 Ital 100% #PlantBased Version πŸ„

Hi dear friends of vegan foods, how are you? On Tuesday my husband went to the city on his bicycle. When he come back home he had sweet corn, peanuts, asparagus, and mushrooms, all gifts for my birthday πŸ˜†.

Do you ever see or hear about a man buying ingredients as gifts for wife’s birthday? He buy them because he knows I love to eat them. Now I have ingredients to make an Ital Khao Soi. This recipe I learned to cook from a Burmese woman on YouTube, and I want to share it for the @LotusShares Plant Power Cooking Challenge | Week #4.

Ingredients

  • 1 package spaghetti noodles
  • 1 1/2 cups chopped fresh mushrooms
  • 1 carrot
  • 1 green pepper
  • 1 potato
  • 1 cob of sweet corn
  • 1/2 block tempeh fry
  • 2 tbsp besan
  • 1 tbsp brown sugar
  • 1 tsp salt or taste
  • 1 tbsp soy sauce
  • 1/4 black pepper
  • 1 tsp turmeric
  • 1 1/2 tsp coriander powder
  • 1 red onion
  • 1 piece of ginger
  • 1/2 lime's zest
  • 4 cloves garlic
  • 4 dried chilies
  • 1 red onion for deep-frying
  • 8 garlic cloves for deep-frying
  • a little fresh basil
  • 3 green onions
  • roasted peanuts or deep-fried peanuts
  • lime juice to taste
  • 2 cups water
  • 1 1/2 cups coconut milk

I cut all like small and hits lemongrass, then cut it short.

I zested lime's peel and grated the ginger. I cut red onion, dried chilies, and removed garlic shells. Then grind them with coriander powder, turmeric, black pepper as well.

I heat coconut oil and fry paste with lemongrass, and stir it until it smells aromatic, then add besan and stir it a little. Then pour a little water and stir it well. Add potatoes, carrots, and stir them a little.

Then add mushrooms and green peppers and stir them well. After add salt, sugar, soy sauce, and stir them and add all the water. Boil until vegetables are cooked. After pour coconut milk and stir a bit. After return to a simmer, and add tempeh. Stir-fry and taste. Add basil it’s ready.

When I was busy cooking I fried garlic, red onions, and peanuts too. I cooked noodles with a little oil and salt, and after I fried some noodles for garnish. I cut green onions small.

When we start to eat we put some noodles in the plate and put khao soi, then add some fried garlic, fried red onions, green onions, peanuts, crush chilies, and pour a little bit of lime juice, then mix well and eat πŸœπŸ˜‹.
