This week's Plant Power curation is the right amount of bitter and sweet. Greetings all, @JustinParke here with another selection of delicious #plantbased recipes to share with you all.

🍪 Sweet & Green 💚

     This week it seems chocolate, guacamole, and guacamole-esque things caught my attention. All of these incredible recipes were put together by veteran Natural Medicine legends, and I even found a new chef to follow with my personal account as well.

     Even though this week's Plant Power curation is a bit dessert-heavy once again, not all of them are super-sweet. If you like bitter dark chocolate, you're in for treat this week.

     The winner of this week's beneficiary is @plantstoplanks. This chef's creativity with limited available seasonal produce is incredible.

Late Winter Plant-Based Meals {Inspiration to Make it to Spring!}

     There is so much going on this post, you simply have to take a look for yourself. Although she claims to be bored and uninspired with the limited amount seasonal produce available, the collection of dishes in this recipe is nothing less than absolutely inspired.

     This chef knows how to make the most of what's available and local any time of the year. Avocadoes have become a distant memory for me, and I was drooling after seeing the multiple dollops of guacamole on these various dishes. I will see you again someday avocadoes!!

The Best Chocolate, Is Home Made Raw Chocolate - So Lets Make Some!

     First I'm longing for avocadoes, now I'm missing bitter dark chocolate. These were both things I enjoyed nearly every day in Ecuador before my family and I relocated to Suriname. This homemade chocolate is no ordinary dark chocolate though, it's got a few extra ingredients to complement the bitterness.

     Orange zest, cacao nibs, and goji berries help to make this homemade treat a little more pleasing to those that may fully apprecialove the flavor or raw not-so-sweet dark chocolate. Of course it's fully #plantbase, so this recipe works for all vegans and vegetarians.

Pea guacamole , eggplant dip and gluten free crackers

     How ironic, I just smashed a bunch of green peas the other day to make some experimental green pea and onion parathas. It was a success, as I hoped the green peas would make things a little sweet. I can imagine the taste of your green peas guacamole because of my little experiment, and oh do I approve!

     Now you've got me craving baba ghanoush, and those homemade crackers would be gone in 5 minutes in my house. What a nice spread I'd love to share with houseguests, bravo chef!!

Homemade Nectarine & Almond Chocolate

     This block of goodness is something I would like to see laying on my cutting board. The recipe comes from none other than our lovely Natural Medicine Community leader, and it's got nectarines, a fruit I haven't seen in ages.

     Even though I can see the beauty in a block of dark chococlate, she went to extra efforts to make this chocolate visually appealing, adding dried calendula to give it some color contrast. The homemade dried nectarines are hidden within too, this just has "eat me" written all over it.

Chewy Oat & Sunflower Crunchies to soothe the soul

     "To bake or not to bake" is the great dilemma with oat-based snacks. They are just so delicious both ways, but nothing makes the house smell as good as a hot sheet of cookies or brownies coming out of the oven.

     I like the addition of sunflower and chia seeds to this recipe, mostly because I like peering into baked goods to look for surprises from the chef. Well, coconut, sunflower seeds, and chia seeds would all be a pleasant surprise to me when biting into these golden delicious crunchies.

Sprouts Salad Recipe!

     Last but not least is this delicious-looking raw moong dal salad all the way from India. Simple doesn't mean not delicious, and this simple but flavorful salad is proof of that. Freshness is key, and all the ingredients are alive with color in this recipe.

     When my family and I eat very spicy meals, it's nice to have a palate cleanser in the form of a kachumber or other kind of salad with in case things get dangerous and someone starts breathing fire. This salad would be a nice compliment to a spicy meal or delicious by itself.
