Hello everyone, today I want to talk about one of my favorite foods since I first went to the jungle, its name is mañoco and besides being a perfect companion for any dish, it is the way that the Piaroa indigenous people have to move their world, their ancestors taught them everything they had to learn from the cassava plants and for them this is their culture, I hope you like it...

What is mañoco?

The mañoco is a food derived from the bitter yucca, the same yucca with which the cassava is prepared. Its preparation starts from the day the planting of the yucca begins, a process that they take care of throughout the year since their main occupation is planting, expert farmers specialized in burning and cutting, respecting the natural cycles of the land that they take care of as part of their culture. This versatile cereal is the main sustenance of the Piaroa indigenous people, not only as part of their economy through barter and sale, but it is also found in each of their meals, in soups, salads or as an accompaniment to dishes such as fish or other meats, to go further with this concept I can add that the first teat of the Piaroa babies is based on mañoco.

Preparation of the Mañoco:

The bitter yucca is peeled and washed with abundant water and left to rest in a container with water for 3 days, so that the murubi (fermentation process) can take place. Once the yucca has rested under the fermentation process, it is washed well and grated to place it in the sebucán (press that extracts the bitter liquid from the yucca) to squeeze it and extract the yare (poison), Then, using a "maso", the dough is pressed until it turns into a dry flour to proceed to sift it in the manare (handmade strainer made with bamboo and palm) and then put it in the sebucán, stirring for the necessary time to release all the liquid. Finally, the flour is carried to a frying pan or budare where the flour is dehydrated for 1 hour, while it is stirred with a wooden paddle until it is completely dry.

Curiosities:

If you just flip it is the recipe for cassava with bitter cassava.
The Sebucán is an instrument that is made of a fiber that is found in the region and serves to extract the liquid part of the cassava by means of pressure, the liquid is drained leaving the solid part inside the SEBUCAN and thus to be able to process correctly the cassava or mañoco. The function of the sifters is to give the size to the particles that will be used to make the mañoco or cassava, as the case may be. If it is passed through the sifter with large holes of 5 to 7 mm it is for mañoco, but if the one with smaller holes is used it is for the manufacture of cassava, another by-product of cassava. It is necessary to wash a lot and to be very careful with the bitter yucca because it is poisonous and a bad treatment can lead to intoxication and even death.

In the city it is not a common food, on the contrary, very few know of its existence, but in the south of the country all the markets sell it being its cost super low taking into consideration the extensive work that leads to place only a kilo of this super food on your table. In the search of helping the community to generate sustainable sources of income, we have organized ourselves to buy at a better price the mañoco and bring it to the city so that more and more people have access to this product that besides being organic and completely free of industrial processes serves as food and medicine at the same time.

My snack or breakfast of fruits with mañoco.

Being in the churuata one of the best experiences is undoubtedly to taste the food that women prepare for their family, the mañoco is never missing at the table and among many ways to eat it, this is my favorite, Yucuta. The yucuta is simply water with mañoco, you leave the mañoco soaking for a couple of minutes and it is ready to eat, its flavor is delicious, but to this is added an extra with fruit juice that to me in particular changed my life, my favorite breakfast is a good cup of mañoco with peach juice, pineapple, lemon, among others, the truth is a cereal that lasts me very little when I bring it from the jungle.

Today I prepared it with pineapple juice, pineapple piaroa, a very special gift that just arrived this Sunday.

Hola a todos, hoy quiero hablarles un poco de uno de mis alimentos preferidos desde que fui la primera vez a la selva, su nombre es mañoco y además de ser un acompañante perfecto para todo platillo, es la forma que tienen los indígenas piaroas de mover su mundo, sus ancestros le enseñaron todo lo que debían aprender de las plantas de yuca y para ellos esto es su cultura, espero les guste...

¿Qué es el mañoco?

El mañoco es un alimento derivado de la yuca amarga, misma yuca con la que se prepara el casabe. Su preparación inicia desde el día en el que comienza la siembra de la yuca, proceso que cuidan durante todo el año ya que su principal oficio es la siembra, expertos agricultores especializados en la quema y tala, respetando los ciclos naturales de la tierra a la cuidan como parte de su cultura. Este cereal tan versátil es el principal sustento de los indígenas piaroas, no solo como parte de su economía mediante el trueque y la venta, sino que además se encuentra en cada una de sus comidas, en sopas, ensaladas o como acompañante de platos como pescado o otras carnes, para ir mas allá con este concepto puedo agregar que el primer tetero de los bebes piaroas es a base de mañoco.

Preparación del Mañoco:

Se pela y se lava la yuca amarga con abundante agua dejándose reposar en un recipiente con agua durante 3 días, para que se realice el murubi (proceso de fermento). Una vez que la yuca fue reposada bajo el proceso de fermentación se procede a lavarse bien y a rallarla para colocar esa masa en el sebucán
(prensa que extrae el líquido amargo de la yuca) para exprimirla y extrae el yare (veneno), dándole con un maso se va pisando hasta convertir la masa en una harina seca para proceder a cernirla en el manare (Colador hecho a mano con bambú y palma) para luego llevarla al sebucán removiendo durante el tiempo necesario para que suelte todo el liquido, por ultimo se lleva la harina a una sartén o budare en el que se deshidrata la harina por 1 hora, mientras se va revolviendo con una paleta de madera hasta quedar completamente seca.

Curiosidades:

Sí sólo se voltea es la receta de casabe con yuca amarga.
El Sebucán es un instrumento que está hecho de una fibra que se encuentra en la región y sirve para extraerle la parte liquida a la yuca por medio de presión, se escurre el liquido dejando la parte solida dentro del SEBUCAN y así poder procesarse correctamente el casabe o mañoco. Los cernidores tienen como función darle el tamaño a las partículas que se destinará para hacer el mañoco o casabe según sea el caso. Si es pasada por el cernidor con hoyos grandes de 5 a7 mm es para mañoco, pero si se utiliza el de hoyos más pequeños es para la fabricación de Casabe otro subproducto de la Yuca. Hay que lavar mucho y tener sumo cuidado con la yuca amarga pues es venenosa y un mal tratamiento puede conducir a una intoxicación y hasta la muerte.

En la ciudad no es un alimento común, al contrario, muy pocos conocen de su existencia, pero en el sur del país todos los mercados lo venden siendo su costo super bajo tomando en consideración el extenso trabajo que lleva colocar solo un kilo de este super alimento en tu mesa. En la búsqueda de ayudar a la comunidad a generar fuentes sustentables de ingresos, nos hemos organizado para comprar a un mejor precio el mañoco y así traerlo a la ciudad para que cada vez mas personas tengan acceso a este producto que además de ser orgánico y completamente libre de procesos industriales sirve como alimento y medicina a la vez.

Mi snack o desayuno de frutas con mañoco.

Estando en la churuata una de las mejores experiencias es sin dudas poder probar el alimento que las mujeres preparan para su familia, el mañoco nunca falta en la mesa y entre muchas formas de comerse, esta es mi preferida, Yucuta. La yucuta es simplemente agua con mañoco, se deja el mañoco remojando un par de minutos y esta listo para comerse, su sabor es delicioso, pero a esto se le suma un extra con zumo de frutas que a mi en lo particular me cambio la vida, mis desayunos predilecto es una buena taza de mañoco con jugo de duraznos, piña, limón, entre otros, la verdad es un cereal que me dura muy poco cuando lo traigo de la selva.

Hoy lo prepare con jugo de piña, piña piaroa un regalo muy especial que recién me llego este domingo.
