Steamed Mushrooms Wrapped in Banana Leaves with Peanut Sauce

A Traditional Indonesian Recipe
Utilizing Banana Leaves for Food Serving


Banana leaves form many of my childhood memories. In the past, we used banana leaves to serve food, you could say for plates.

In my childhood, we rarely used plates in general. We are used to cooking food with banana leaves and then serving it straight away without using a plate.

It doesn't stop there, banana leaves add an extra fragrant aroma to the food.

So this time I will share with you the recipe for "Steamed Mushrooms Wrapped in Banana Leaves".

The ingredients used are very simple, all the ingredients here are plant-based.

NOTES

You can replace complementary vegetables according to your supplies.

Then, for banana leaves, if you can not use banana leaves, you can steam the vegetables in a steamer container as usual.

THE INGREDIENTS

  • 1 banana leaf midrib, dried in the sun before use so that it doesn't break during use.
  • 300 grams of mushrooms
  • 100 grams of broccoli
  • 50 grams of carrot
  • 100 ml of thick coconut milk or coconut cream
  • 5 pieces of red chili peppers, thinly sliced
  • 1 tablespoon of pepper if desired
  • 1 tablespoon of mushroom broth powder, can be replaced with another broth.


The White Paste Ingredients

  • 5 cloves of red onion or you can replace it with spring onion.
  • 3 cloves of garlic
  • 5 pieces of candlenuts
  • 2 tablespoons of salt



COOKING INSTRUCTIONS

- Step 1

Blend the spices for the white paste.




- Step 2

In one container, mix coconut milk, red chili slices, and mashed white paste. Stir well.




- Step 3

Add the chopped vegetables to the spice mixture. Stir well, then wait about 15 minutes.

Heat the steamer while wrapping the ingredients in banana leaves.

Wrap the mushrooms and vegetables using banana leaves and toothpicks to cover the banana leaves.

Skip this step, and transfer them to a steamer if you don't have banana leaves available.

Steam for 25 minutes, remove from heat, then serve as side dishes.




SERVING SESSION

I served Steamed Mushrooms Wrapped in Banana Leaves with Roasted Sweet Potatoes.

So, while preparing the mushroom dish, I also roast Sweet Potatoes at 250 degrees Celsius for 60 minutes.

Besides Sweet Potatoes, I also added creamy peanut sauce. You can combine it with your favorite salad dressing.
