Zord's Sambal Belacan Egg Fried Rice Recipe (Step by Step Process)

I woke up at 11am just to prepped this hearty lunch. Also to try out the new sambal belacan that I've bought yesterday. Sambal Belacan is an Indonesian chilli paste made up of various spices ranging from chilli pepper, shallots, shrimps, garlic, and ginger. It's usually used in authentic spicy Indonesian food as it gives the food a lot of heat and flavour. The shrimp taste of the sambal is what makes the food super flavourful. I've decided to try this sambal belacan for the first time in my egg fried rice.


The Ingredients

  1. Eggs x 2
  2. french beans (preference)
  3. carrots (preference)
  4. onion x 1
  5. garlic x 3 cloves
  6. Traditional Sambal Belacan (adabi brand)
  7. chives (preference)
  8. Rice x half mug enough for 2 pax
  9. Minced beef
  10. sesame oil x 1 tablespoon
  11. light soy sauce x 2 tablespoon

Cooking Process

First of all, let's throw two eggs into the pan with a dash of cooking oil. I wouldn't use olive oil because asian food needs cooking oil for the heat. Sunflower, canola oil will do. Cook the egg for 1 minute and leave it aside.

Next, re-oil the pan if you feel the pan is drying up. Throw in the french beans and carrots first because these take longer to soften up. Cook them for 3 minutes and you can throw in the garlic and onions.

Season the mixture with some sesame oil, light soy sauce. This will bring out all the flavour of the ingredients immediately. Cook until you can smell the garlic and sesame oil.

It's time to throw in the minced beef. Take note that the minced beef that I use is not marinated and it doesn't have to be. I will season the beef with light soy sauce and a dash of sesame oil. I turn the heat high and start frying. My personal preference, I added 2 tablespoon of oyster sauce to give a little bit of sweetness. Cook for 5-8 minutes until the beef is cooked.

It is time for the main highlight of this event. The rice. Dump in the rice. Overnight leftover chilled rice is the best for fried rice, if not you can cook and fry it longer until the rice is slightly charred. Stir and keep the pan at high heat.

Finally, the last ingredients would be the sambal belacan. You may throw in the egg you've prepared previously in this step together with the belacan. I put in two tablespoon of sambal in the center of the pan and leave it to fry for a few seconds. In this step, the sambal belacan will start smoking up the kitchen with it's delightful smell, that is when you know it's time to mix the sambal with the rice and others. Throw in some garnishing of chives to keep the rice aesthetic.

Tada!

The end result is a delicious flavourful Indonesian sambal belacan egg fried rice. This fried rice takes the main stage in any lunch/dinner parties. Believe it or not, it's a staple in most South East Asian countries! For this cooking, the rice is a little oily but everything is still really tasty.
