Lockdown has some perks like when you run out of bread and do not want to venture to the supermarket with its long queues that snake all the way down the stairs and around the corner!
How could this possibly be a perk?
Well, homemade bread sure tastes better than the mass produced breads we find in the supermarkets these days not so!
So, something else that’s been happening here in SA is that alcohol sales are prohibited and as our initial lockdown was only meant to last three weeks, now extended to five weeks, everyone’s been running out of beer, wine etc etc.
One thing you cannot find in the stores at the moment is yeast, believe it or not, and I found out why!
All the beer and wine drinkers have been buying up the stock and are making either Pineapple Beer or Wine!
With no yeast in the pantry, a Buttermilk Soda Bread would be the next best thing, so here’s a little loaf for you; easy peasy to make!
Buttermilk Soda Bread Recipe
- 500 gram Self-raising Flour
- 5ml Salt (or add half a packet White Onion Soup for a savoury bread)
- 500 ml Buttermilk or natural Yogurt
- A little Cheddar Cheese or Sunflower Seeds to sprinkle on top
Mix all together, place in 2 small buttered bread pans, sprinkle cheese or seeds on top & bake at 180°C for approx. 40 min.
Lovely with loads of butter but also made a mean Scrambled Egg French Toast Sandwich for breakfast the next morning.
Scrambled Egg French Toast Sandwich
Beat 2 eggs with a little milk & season to taste.
Pour into frying pan as if you're making an omelette.
Dip 2 slices of bread in, turning to cover both sides with egg.
Flip like an omelette.
Turn eggy sides onto one slice of bread.
Flip one slice of bread to close the ‘sandwich’.
Enjoy!
