It's lunch time
Actually, I seldom cooked on Sunday because I wanted to make it a point to spend more time with the boys, also meant lesser screen or gadget time, but there was some little bit more leftover BKT soup and I did not intend to keep another day, so just made do with whatever I had to cook lunch. The boys called it Sunday special meal, because I seldom cook on Sunday.
Usually I would only cook one meat dish and one vege dish, so this was absolutely special with extra mushroom (from the can) Bak Kut Teh soup and extra egg dish.
Let's Dive In
1️⃣StiR fry vegetables
This was the life-saver dish. Pop in your head into fridge and used whatever vegetables in there to stir fry. It could be a one-pot dish as well if I added in some meat.
2️⃣Fried fish
The children loved this although I rarely cooked as the cleaning would take more time. But special Sunday right? Top with onion oil and soya sauce, yum yum!
3️⃣Egg with capsicum
I supposed to stir fry the capsicum with the above vegetables but my brother didn't like capsicum, so egg with capsicum as extra dish which all of us would gladly eat except my brother.
4️⃣Bak Kut Teh Button Mushroom
I really had no energy to do extra meat dish, so I had a can of mushrooms, just throw into the soup. Voila!
