RE: Saturday after market job finished on Sunday

To be honest, I use what I can find and they are not often identifiable. The hotter the better. That said, I don't use birds eye because they are so small that they are both fiddly and wasteful. I also don't, if I can avoid it, use jalapenos because they are mild. It does mean that the heat varies. I have used scotch bonnet, cherry and habanero when we've had them in the garden. And in combination. I suppose I should pay more attention. Especially as I have a growing band of regular customers.
