Meatfree Monday: not quite a pickle

That is Women's Day work product. Lemon marmalade and mixed pickle. The lemon marmalade, this time, with just Cape Rough lemons. The result is a darker product because of the higher sugar content.

Last night's meatfree Monday was partly inspired by the peppers left over from the little batch of pickles. Making those had not been in the plan, either, but after having suddenly selling three jars in short order over the last two markets, I had to make more. And quickly because: they have to pickle. I had to both work with what I had and "share" ingredients with the meals I had planned.

My original plan had been a cauliflower curry.

Plan B was roasted sweet potato, cumin roasted cauliflower and the stir fried peppers with onion, garlic and harissa. In the absence of.fresh coriander, the final touch was a handful of chopped perennial basil.

The Moroccan inspired flavour combination really worked.
I will do that entirely plant-based meal again.

It was also easy because while all that was going on, I was starting bread for today and which is baking as I write this and the house is full of the smell of bread!
