Cuando llega la hora de decorar un postre, es la parte que más difícil considero dentro de la pastelería. la razón es porque todo se basa en saber las técnicas de cocina necesarias y creatividad. Se puede tener mucha creatividad, pero si no se conoce las técnicas necesarias, entonces suceden cosas que hacen que el resultado no sea lo espero y lo mismo pasa si es al revés la situación. Esto no es más que un brazo gitano o pionono, que está enfocado a sabores o decoraciones de la navidad. Entre las asignaciones que nos distribuimos en mi grupo, yo me encargue de la parte de chocolate y luego de un intercambio de ideas, creamos una idea para decorar el tronco de navidad. Queríamos un tronco con chocolate que pareciera uno real, me encanto el efecto que logre con el chocolate, pero sentía que hacía falto algo más y fue ahí donde pensé en hojas de chocolate. > For my pastry classes, I had to prepare a dessert called "yule log". Parecía yo un loco buscando hojas reales en la zona donde vivo, pero faltando 2 horas para ir a clases, caí en cuenta que en casa tengo una higuera y sus hojas son hermosas, no son toxicas ya que se usan en infusiones o dulcería y tienen una forma hermosa, con los nervios bien marcados, es la hoja que estaba buscando. Las hojas de higo son muy grandes y fuertes, pero agarré unas cuantas pequeñas y procedí a preparar las hojas de chocolate y me encanto tanto el resultado, que hoy comparto contigo todo el procedimiento. > The ideal to make this is to have the silicone or acetate molds, but when you don't have that at hand, it's time to improvise. Se puede usar chocolate real, pero hay que temperar el chocolate primero o utilizar chocolate cobertura y no sufrir en el proceso. - Lo primero es seleccionar un tipo de hoja que se adapte a la decoración. Las hojas no deben ser toxicas, hay que tener presente que esta decoración de chocolate es comestible. Las hojas de higuera son hermosas, tienen los nervios bien marcados y eso ayuda a que el chocolate adopte esas formas. Hay que lavar y secar muy bien las hojas. > - The first thing to do is to select a type of leaf that suits the decoration. La idea no es trabajar con un chocolate caliente para que no se dañe la hoja con el calor o se ponga muy suave. Con ayuda de un pincel, se procede a pintar la hoja con el chocolate. Ten presente que el chocolate se va a colocar por donde la hoja tiene los nervios. Es importante colocar papel de horno o una que tenga una capa plástica o láminas de acetato, esto para evitar que el chocolate se pegue a la bandeja. > - The chocolate is melted and allowed to cool to 28-30 degrees Celsius. Si solo se le coloca una capa, al momento de despegar la hoja será un desastre. Lo recomendable es colocar dos capas para que sea firme. La primera capa es algo complicada de colocar, pero la segunda es sencilla. > - In this image you can see that the leaves on the left are more covered with chocolate and that is because they have two layers of chocolate. Al momento de despegar la hoja del chocolate, solo hay que verificar que no haya chocolate por el lado verde para que no impida despegar. Las hojas se pueden pintar con polvo dorado, como fue en mi caso, pero también se puede utilizar colorantes o escarchas comestibles. En estas fechas que se avecinan, poder utilizar elementos decorativos que hagan resaltar las preparaciones, son ese extra para que los comensales guarden espacio para el postre a la hora de comer. > The leaves are ready, the process is quite simple, but it is done with a lot of patience and without despair.
