Vietnamese rice noodle salad 越式米粉沙拉

When summer comes, I often fancy cold dishes as Asians normally eat a hot meal. That's unless you're in Japan where there are a unlimited supply of sashimi and sushi, or Thai/Vietnamese cold noodle salad. Boy I do miss those dishes!

這兩天看見劉美女po美食文章,一時愛文芒,一時又珍奶冰淇淋, 看得我流口水,可惜只能看不能吃。 實在很懷念台灣美食喔! 看見愛文芒,必定是夏天來了。 平常夏季天氣比較悶熱,很多時我都會想吃冷的食物,例如日本魚生壽司或越泰式沙拉米粉。 又懷念美食😌

I'm pretty limited in food purchases during lockdown, let alone Asian food. Luckily there's a small Asian shop in town and they stock limited supplies of Asian food like noodles and sauces. My lettuce is ready to be harvested and then the other day my sister gave me some beanshoots that she sprouted herself. I thought why not make a Vietnamese cold noodle salad! The essence of this dish is the fish sauce dressing, made of 1 part fish sauce, 3 parts water, 1 table spoon sugar, 2 chillies and 3 cloves of garlic all chopped up. In summer I always have a bottle in my fridge.

英國現在還封城,不能跑去大城市的中式商店,幸好我家附近一家印度人開的小商店,裏面有些少亞洲食品,如粉麵醬油等。 我近期在自家種的青菜開始可以收成, 另外姐姐又發了一點牙菜分給我,於是昨天靈機一觸做了一道越式米粉沙拉。 這道菜的靈魂是自己調的蒜泥辣椒魚露,是一位越南朋友教。方法很簡單,一份魚露三份水,加一湯匙糖,兩條指天椒和三小顆蒜頭切碎,然後全部拌在一起便可以。 平常夏天我的冰箱一定長備一瓶。

Making the cold noodle salad is even easier. Cook the rice noodles for a few minutes, blanch the beanshoots and let both to cool. Oh, mustn't forget the greens (my homegrown I'm so chuffed)! I fried some pork pieces as hubby likes his meat and added crushed peanuts on top. Finally, I added the fish sauce dressing in. It was superpops devine!! I have to give myself full marks 😂
越式米粉沙拉做法更簡單。米粉先煮熟待涼, 芽菜用一些熱水燙一下,青菜是新鮮從我的自家種採摘。老公無肉不歡,所以加一點切片豬腩肉煎到香口。最後加入蒜泥辣椒魚露。天啊!很久沒食過那麼美味的米粉,真的不能不讚一下自己😂
