Spicy Mutton Curry Cooking Recipe

Hi everyone! Today i am going to share a recipe on how to cook a spicy mutton curry. This is my entry to @qurator's Hive Top Chef competition. The theme of this week is Curry and since I love curry, I thought of giving it a try. Click here if you are interested too.

Ingredients


A. Pressure cooker mutton cooking

  • Mutton - 1 kg (chopped)
  • Chilli powder - 1 tbsp
  • Curry powder - 2 tbsp
  • Garam masala - 1 tbsp
  • Turmeric powder - 2 tsp
  • Ginger-garlic paste - 2 tbsp
  • Star anise - 2
  • Cloves - 4
  • Cinnamon - 1
  • Water - 1 cup

B. Cooking the curry in a pot

  • Oil - 30ml
  • Water - 2 cups
  • Cloves - 6
  • Star Anise - 3
  • Cinnamon - 4
  • Cardamom - 5
  • Onion - 2 (sliced)
  • Ginger-garlic paste - 2 tbsp
  • Green chillies - 2 (sliced lengthwise)
  • Tomatoes - 2
  • Turmeric powder - 1 tsp
  • Chilli powder - 1 tbsp
  • Curry powder - 3 tbsp
  • Cumin powder - 1 tsp
  • Garam masala - 2 tbsp
  • Curry leaves - 2 springs
  • Salt - to taste

Mutton is a red meat so it takes a lot of time to tenderize and cook. Therefore, it is easier to cook it in a pressure cooker first before proceeding to make the curry. First of all, pour some water into the pressure cooker and put the mutton in it. Then, add chilli powder, curry powder, turmeric powder and garam masala to it. Add some ginger-garlic paste as well, followed by star anise, cinnamon and cloves. The spices help to reduce the raw taste to an extent.

Here's a closer look of it. Then, cover it with the lid and let the mutton cook until there are 3 whistles.

This is how the mutton looks after being partially cooked in the pressure cooker. When it is done cooking, turn the stove off and place it aside.

Now it is time to cook the mutton into a mutton curry. Use a pot or a wok, based on your preference. Pour the cooking oil and once it heats up, add the cloves, star anise, cinnamon and cardamom into it. Next, add the onion followed by green chillies and curry leaves. Mix them all well until the onion starts turning slightly brownish.

Add the ginger-garlic paste and continue to mix them.

Then, add the tomatoes.

By the way, in case you are wondering how the pot looks, this is how it looks.

Add the cumin powder, garam masala and turmeric powder.

Add the chilli powder and curry powder as well. While adding the spice powders, it gets quite dry so add some water so you will be able to mix the ingredients easily.

Now, add the partially cooked mutton from the pressure cooker. Add all of the contents including the spices masala mixture. Add salt to taste. Then, mix the mutton with all the other ingredients well. Then, close the pot with a lid and let it cook in the heat for about 10 minutes. Check it to see if the oil is bursting to the top surface. That is when you know that the curry is ready to be served. If it is not ready then give it a mix and cover it back with a lid and check again after 5 minutes.

Spicy mutton curry is ready!! Please forgive me for the messy looking bowl as my brother already start eating before I could take a picture of it after serving. But I assure you that in spite of looking messy, the curry tasted fantastic!

I had the mutton curry with some idli along with another curry which is lentil curry. You can eat it with rice or other meals like idli or dosa =)
