TORTILLAS

For this week's competition on Hive Top Chef the required ingredient is flatbread.
Tortillas are one of our favorite dishes so we couldn't miss the chance to take a part.

The great thing about tortillas is that you can experiment with various ingredients. We decided to make them with minced meat, onions, beans, corn, peppers and tomato sauce.

Making your own flatbread isn't hard to do and it's way better and healthier than bought one. It takes a little practice to make them perfect.

FLATBREAD RECIPE:

Ingredients (for 12 tortillas):
• 500 grams flour
• 1 baking powder
• 6 grams salt
• 300 mL yogurt
• 50 mL oil

Preparation:

  1. Mix all the ingredients and knead the dough for few minutes.
  2. Cover the dough with plastic foil and leave it on a room temperature for about 20 min to relax.
  3. Weigh 12 equal pieces of dough and make them into little balls. Cover them with a cloth.
  4. Heat up the pan really hot and start rolling your balls as thinly as possible (until you can see through them).
  5. Put the tortilla on a hot pan with medium heat and bake it for 10-20 seconds on both sides (you should see the bubbles forming). Be careful not to overcook them, because they need to stay soft.
  6. Stack them on top of each other and cover them with a cloth. (*little tip: you can moisten the cloth so tortillas won't get dry).

FILLING:

Ingredients:
• 500 grams minced meat
• 1 medium-size red pepper (or half of the big one)
• 1 big onion (or two small ones)
• 150 grams corn
• 250 grams beans
• 300-400 mL tomato sauce
• Salt, pepper, chili or any other spices you like

Preparation:

  • Slice up the onion into thin strips and fry on low heat on little oil until it has nice color.
  • Turn up the heat to maximum and add minced meat. Fry the meat until all water has evaporated and the meat becomes nice and crispy. Add the seasonings (we added mixed spices for „chili con carne“)
  • Add thinly sliced peppers and fry on medium heat for few minutes.

  • Add corn and beans and cook for few minutes.

  • Finally add tomato sauce, cover the pan and cook for about 15-20 minutes. Taste and season more if needed.

For the ultimate pleasure use Sriracha sauce if you find one in the store. It's perfect, but very very spicy so be careful with the amount.
