Traditional Dessert

Hello, food lovers greetings🙏. Seems like this time more people are interested. feels like a competition now. here I am posting my entry top chef traditional desserts. Grew up in a Goan Portuguese neighbourhood with influence from friends and neighbours. Learned a few dishes especially desserts. Like Dodal. bebinca, Serradura, and this custard tart. After a long time, I am making it. I read this is one of the world's most popular desserts.

The Ingredients:
The puff pastry dough is made from flour water, and a pinch of salt.
100 gram. Butter to laminate the pastry.
1.5 cup milk
3/4 cup sugar.
1/2 cup water.
4-5 cm cinnamon stick
2-3 cm lemon peel
4 egg yolk
3tsp white flour
3 tsp cornflour

making dough is just adding a pinch of salt and water and making a sticky dough. and rest it for 15-20 minutes.

The dough is so sticky needs enough flour for dusting and rolling.
After rolling in a rectangle apply soft butter in a thin layer and fold the dough and make the squire shape repeat this procedure one more time. now for 10 minutes, the dough has to rest in the fridge.

After 10 min take out the dough from the fridge and roll again the rectangle. now spread a thin layer of butter on it left 2 cm dough without butter and brush water on that part. now roll the dough in a log shape

after a roll-in lag, it goes in the fridge overnight.

Now slice the roll into small balls which go in the muffin pan for the press in cup shape tart.

For filling first make sugar syrup in 1/2 cup of water add 11/2 cup sugar and cinnamon stick lemon peel cook together and set aside

Mix white flour and cornflour add a few spoons of milk make a smooth paste add in the milk and start cooking stir it constantly to avoid forming lumps. after thickening it add sugar syrup slowly to the mixture keep whisking.

add the egg yolk and whisk the custard smooth and thick enough to layer on the spoon bottom.

Fill the custard in the tart cups about 3/4 full

bake it in the preheated oven for 250c 20-22 minutes.
