I wanted to make this bread like this, using ingredients that I had already used in another recipe, to show you that with few materials, but whit various techniques, approaches and some imagination, we can make very varied recipes. I make this comment because sometimes it causes me sadness and confusion, seeing the same recipe in the communities over and over again, repeated ad nauseam, with slight variations, that seems so poor to me, so little... I think that, as content creators , we need to put effort into our blogs, making them as complete, enriching and excellent as we can. That is why I invite you, once again, to read, investigate, document yourself in books, magazines, recipe books, on television, on other social networks and Internet pages, so that you can learn about other recipes and cuisines from other cultures; It is something very beautiful, fun and that also allows us to expand our knowledge. And I also know that, in some countries and economies, it is difficult to buy ingredients for recipes, since I live in a country with a TERRIBLE economy, but we just need to be creative and plan what we will do.

Quise hacer este pan así, usando ingredientes que ya había empleado en otra receta, para demostrarles que con pocos materiales, pero con diversas técnicas, enfoques y algo de imaginación, podemos hacer recetas muy variadas. Hago este comentario, porque en ocasiones me causa tristeza y desconcierto, ver en las comunidades la misma receta una y otra vez, repetida hasta el cansancio, con ligeras variaciones, eso me parece tan pobre, tan poquito… pienso que, como creadores de contenido, necesitamos esmerarnos en nuestros blogs, que sean lo más completos, enriquecedores y excelentes que podamos. Por eso les invito, una vez más, a que lean, investiguen, se documenten en libros, revistas, recetarios, en televisión, en otras redes sociales y páginas de Internet, para que conozcan otras recetas y gastronomías de otras culturas; es algo muy bonito, divertido y que además nos permite ampliar nuestros conocimientos. Y sé también que, en algunos países y economías, es difícil comprar ingredientes para las recetas, pues yo vivo en un país con una economía PÉSIMA, pero sólo requerimos ser creativos y planificar lo que haremos.

After this bittersweet reflection, which I announced in the title of this post, I will now explain why this bread is an experiment. Days ago, at the end of December, I was looking for recipes to make the Rosca de Reyes. I wanted to make something different, that required less kneading, and in fact I found a very good recipe, which unfortunately was not vegan, but obviously I would veganize it, which is what I always do. The truth is, that days passed and I did not make the Rosca de Reyes, however, I had the idea of veganized dough, and then seeing the ingredients that I had on hand I made this bread, and the experiment is not in veganization, but in the hydration of the dough, which unintentionally exceeded the ideal level, and became a highly hydrated dough, which I left to ferment for 18 hours; and although I did not use sourdough, I did make a pre-ferment so that it would rise and I did not do the final degassing, that is why this recipe is an experiment. After this long explanation, let's go to the recipe.

Luego de esta agridulce reflexión, la cual anuncié en el título de este post, paso a explicarles porqué este pan es un experimento. Días atrás, a finales de diciembre, estuve buscando recetas para hacer la Rosca de Reyes. Quería hacer algo diferente, que requiriese menos amasado, y de hecho encontré una receta muy buena, que lamentablemente no era vegana, pero obviamente yo la veganizaría, que es lo que siempre hago. Lo cierto es, que pasaron los días y no hice la Rosca de Reyes, sin embargo, me quedó la idea de la masa veganizada, y entonces viendo los ingredientes que tenía a mano hice este pan, y el experimento está no en la veganización, sino en la hidratación de la masa, la cual de manera no intencional superó el nivel ideal, y pasó a convertirse en una masa de alta hidratación, la cual dejé fermentar 18 horas; y si bien no usé masa madre, sí hice un prefermento para que creciera y no le hice la desgasificación final, por eso esta receta es un experimento. Luego de esta larga explicación, vamos a la receta.

+ Preparation time: Having all the ingredients on hand, mixing and kneading require a maximum of 30 minutes. The fermentation period was 18 hours, although it can be 12 hours. Baking time is short, I recommend 35 minutes with an oven at 170°C. + Servings: One loaf of bread weighing 700 g. The quantities of ingredients that I present below gave this experimental result. If you want to make a less hydrated dough, you can reduce the water by half. Prepare the chia egg and the preferment. To make the egg, dry grind the tablespoon of chia, place it in a cup with the 3 tablespoons of hot water, stir and let it hydrate for 15 minutes. For the preferment, place half of the warm water in a container, that is, 100 ml, add the yeast, 1 teaspoon of white sugar and 1 tablespoon of flour, mix and wait 15 minutes for the preferment to activate.

Preparar el huevo de chía y el prefermento. Para hacer el huevo, moler en seco la cucharada de chía, colocarla en una taza con las 3 cucharadas de agua caliente, remover y dejar que se hidrate por 15 minutos. Para el prefermento, colocar en un recipiente la mitad del agua tibia, o sea, 100 ml, añadir la levadura, 1 cucharadita de azúcar blanca y 1 cucharada de harina, mezclar y esperar 15 minutos que se active el prefermento.

Grate the lime peel and set aside. Next, add the orange syrup to the diced coconut and mix, so that it is infused with that delicious flavor. Let it rest for 15 minutes. In the photo of the ingredients you can see a dish with grated coconut, and this is because initially I thought about also using coconut in that presentation, but then I gave up.

Rallar la piel de la lima y reservar. Seguidamente añadir el sirope de naranja al coco en cuadritos y mezclar, para que se impregne de ese delicioso sabor. Dejarlo en reposo por 15 minutos. En la foto de los ingredientes pueden ver un plato con coco rallado, y esto es porque inicialmente pensé en usar también el coco en esa presentación, pero luego desistí.

After the time required for the previous preparations (chia egg, prefermento, coconut with orange syrup), place the flour in a large bowl that is spacious to knead well. Open a well in the center of the flour. Add the chia egg, sugar, preferment, salt, lime zest, oil, coconut with orange syrup, water. Mix first with a spatula or a hand mixer. Then, when the mixture is very thick, knead by hand. Already, at this point, the dough smells very good.

Transcurrido el tiempo requerido para las preparaciones previas (huevo de chía, prefermento, coco con sirope de naranaja), colocar la harina en un bol grande que sea espacioso para amasar bien. Abrir un hueco en el centro de la harina. Añadir el huevo de chía, azúcar, prefermento, sal, ralladura de lima, aceite, el coco con el sirope de naranja, el agua. Mezclar primero con una espátula o con una batidora manual. Luego, cuando la mezcla está muy gruesa, amasar con la mano. Ya, en este punto, la masa huele muy bien.

When kneading by hand, I realized that I would not obtain the expected result. I kneaded vigorously for 25 minutes and the dough never stiffened, it was still very chewy. So I chose to place it in a bowl previously greased with oil, cover it with a clean cloth, put it in the turned off oven, and forget about it until the next day. The dough was fermenting for 18 hours.

Al amasar con la mano, fue que me dí cuenta que yo no obtendría el resultado esperado. Amasé con fuerza por 25 minutos y jamás la masa dio punto, seguía siendo muy chiclosa. Así que opté por colocarla en un tazón previamente engrasado con aceite, taparla con un paño limpio, ponerla dentro del horno apagado, y olvidarme de ella hasta el día siguiente. La masa estuvo 18 horas fermentando.

The next day, when I took out the dough that was resting in the oven, it was still chewy, it was very soft, so I didn't degas it (this is also experimental), I just put it in the mold with oiled baking paper, and bake in a preheated oven for 45 minutes at 180°C; but the bread was toasted on the bottom, so I recommend baking for less time and at a lower temperature (35 minutes at 170°C), but it will all depend on the oven.

Al día siguiente, cuando saqué la masa que reposaba en el horno, ésta seguía siendo chiclosa, estaba muy blanda, así que no la desgasifiqué, (esto también es experimental), sólo la puse en el molde con papel de hornear aceitado, y la horneé en horno precalentado, durante 45 minutos, a 180 °C; pero el pan se tostó en la parte de abajo, por eso recomiendo hornear menos tiempo y a una temperatura más baja (35 minutos a 170 °C), pero todo dependerá del horno.

The aroma that filled the house when I baked the bread, and after I took it out of the oven, was intense and delicious. The bread browned very well on the surface, although its shape was not the neatest. When cut, it was soft even with the toasted base. The crumb was very airy and the coconut pieces were well distributed. The color is beautiful and the flavor even better. I think I will repeat this recipe in the future, incorporating more ingredients to enrich the dough and moisturizing it a little less. Here I served these slices of bread, with a glass of cold orangeade, a delicious combination, but you can accompany it with whatever you want.

El aroma que inundó la casa cuando horneaba el pan, y luego que lo saqué del horno, era intenso y delicioso. El pan se doró muy bien en la superficie, aunque su forma no era lo más prolija. Al cortarlo, era suave aún con lo tostado de la base. La miga quedó muy aireada y los trozos de coco quedaron bien distribuidos. El color es hermoso y el sabor aún mucho mejor. Creo que repetiré esta receta a futuro, incorporando más ingredientes para enriquecer la masa e hidratándola un poco menos. Aquí serví estas rebanadas de pan, con un vaso de naranjada fría, una combinación deliciosa, pero puedes acompañarlo con lo que desees.
