[ESP-ING] Mis primeros frijoles rojos de Colombia || My first red beans from Colombia

Hello Hive Food cooks, I greet you with much affection from the cold city of Bogota.

Here I have eaten several times "corrientazo", which is like in Venezuela the executive menu. Many times that meal is accompanied by red beans and I really liked them a lot.
So I gave myself the task today to prepare them as a friend who is married to a Colombian explained to me.

Let's get to work!

The first thing I did was to soak the beans in water overnight.

Since I don't have a pressure cooker, this method has helped me to soften them faster and not waste so much gas while cooking.

The next morning I assembled to cook the beans with:
1 large potato
Half a bell pepper
1 large garlic
half an onion
and a small piece of carrot that I had left in the fridge.
I took it to medium heat for about 40 minutes, adding water if I saw that they were getting too dry.

I added a teaspoon of salt for cooking. I cover it and let it cook, check when the grain is soft.

When I check I feel that the beans are close to being ready but it lacks a little water. I add a cup and put the lid back on.

Media cebolla
Trozo de pimentón amarillo
Un tomate
3 ajos
Ramitas de cebollín

While the beans continue to soften, I will make the dressing. Here we traditionally use hogao, which is a mojito that they make a lot in Colombia. In a previous recipe I explained how to make it.

This time I will make it similar, but I will add yellow bell pepper, a chorizo and no salt or seasoning.

We will chop in small squares:
Half an onion
Piece of yellow bell pepper
A tomato
3 garlic
Sprigs of chives

Fry the onion, chives, paprika, crushed garlic and the chorizo chopped into small pieces.

When they are well sautéed, add the tomato.
After it has released its juices and is well cooked, we turn it off and set it aside to add it to the beans.

With the beans soft, I will blend the ingredients I added for cooking.
I will take them to the blender with the bean juice.

We are going to add this mixture to our beans and bring them back to a simmer.

This helps us to make them thicker and the flavor richer.
Add a teaspoon of salt, oregano, pepper, cumin and turmeric.

When it starts to boil, we are going to add the sofrito that we had previously made.

We cover and let it cook a little more.
Then when it is ready I add some chopped cilantro.
The aroma fills the house and announces that it is time to eat.

I served these beans with rice, avocado and a little piece of meat.

The truth is that we ate delicious, my husband says that they were better than the ones we have tried here.

I love to give myself time to prepare delicious things, sometimes I am so busy that I cook the most practical thing.

I hope you like this recipe too!
