He estado un poco ausente de compartir recetas, he tenido que atender algunos asuntos, entre ellos de salud, pero tengo una lista de recetas pendientes por compartir, que estoy seguro que les va a encantar. Personalmente me gusta practicar una receta 2 o 3 veces antes de compartirla, para asegurar que las cantidades de los ingredientes que les doy, sean las correctas y así puedan disfrutar de una receta que si funciona. Vendrán recetas de alta pastelería, así como las tradicionales de mi país y otros países, así que he estado realmente emocionado por comenzar pronto.
I have been a little absent from sharing recipes, I have had to attend to some issues, including health, but I have a list of pending recipes to share, that I am sure you will love. Personally I like to practice a recipe 2 or 3 times before sharing it, to make sure that the amounts of ingredients I give you are correct so you can enjoy a recipe that works. A lo largo de mis estudios de Pastelería, he aprendido técnicas y recetas de diferentes países. Una de las clases que más estaba esperando era la de la Mousse, ya que me encanta la textura de este postre, que puede ser preparado de muchos sabores. En clases se preparó de maracuyá, el toque acido de esta fruta, combinado con el dulzor de la crema montada, hacen de este postre un deleite al paladar.
Throughout my pastry studies, I have learned techniques and recipes from different countries. One of the classes I was most looking forward to was the Mousse, as I love the texture of this dessert, which can be prepared in many flavors. In class, it was prepared with passion fruit, the acid flavor of this fruit, combined with the sweetness of the whipped cream, make this dessert a delight to the palate.
Está receta la voy a compartir, así como una versión de chocolate y fresas. También he tenido en mente una versión de guayaba, ya que me encanta el sabor de esta fruta en los postres, aunque no es fácil trabajarla ya que, en mucha cantidad, opacaría todos los sabores. Debo decir que la Mousse es uno de mis postres favoritos y al aprender las técnicas necesarias para prepararlo, me ha abierto un mundo creativo para utilizar esta crema en diferentes recetas.
I am going to share this recipe, as well as a chocolate and strawberry version. I have also had in mind a guava version, since I love the flavor of this fruit in desserts, although it is not easy to work with it since, in too much quantity, it would overshadow all the flavors. I must say that Mousse is one of my favorite desserts and learning the necessary techniques to prepare it, has opened a creative world for me to use this cream in different recipes.
Un clásico de la pastelería francesa son los profiteroles. Se preparan con la masa de doble cocción, mejor conocida como la pasta choux. Esta masa me encanta, es la que utilizamos para preparar churros, pero con algunas diferencias. Es tan versátil, que se pueden hacer muchas cosas con ellas. Los profiteroles son tan deliciosos, el relleno que se les puede colocar puede ser de cualquier sabor y textura y eso hace que esta preparación se adapte a cualquier gusto.
A classic French pastry is the profiteroles. They are prepared with double-baked dough, better known as choux pastry. I love this dough, it is the one we use to prepare churros, but with some differences. It is so versatile, you can do many things with them. Profiteroles are so delicious, the filling you can put in them can be of any flavor and texture and that makes this preparation adapts to any taste.
En clase se hicieron tipo bastoncitos y como es una pasta que, al cocinar, crece y queda hueco en el centro, se preparó una crema diplomática, otro clásico de la pastelería francesa. La crema diplomática no es más que la mezcla de la crema chantillí con la crema pastelera. Mezclar estas dos cremas hace que todo cambie, un mejor color, una mejor textura y un mejor sabor. Si has comido crema chantillí, sabrás que puede ser un poco grasosa al paladar, pero al ser mezclada con la crema pastelera, se transforma en una crema sedosa.
In class we made them as small sticks and as it is a dough that, when cooked, grows and leaves a hollow in the center, we prepared a diplomatic cream, another classic of French pastry making. The diplomatic cream is nothing more than a mixture of whipped cream and pastry cream. Mixing these two creams makes everything change, a better color, a better texture and a better taste. If you have eaten whipped cream, you will know that it can be a little greasy to the palate, but when mixed with pastry cream, it becomes a soft and silky cream.
Otras de las formas en las que se puede utilizar la pasta choux, es en forma de roscas. Esto sube el nivel del aspecto visual, ya que se le coloca almendras, que se tuestan al momento de hornear y luego se rellenan las roscas con la crema diplomática, permitiendo a las personas ver todas las texturas presentes. No se ustedes, pero cuando yo veo este tipo de roscas, me provoca comer una.
Another way in which choux pastry can be used is in the form of donuts. This takes the visual aspect up a notch, as almonds are toasted during baking and then the doughnuts are filled with the diplomatic cream, allowing people to see all the textures present. I don't know about you, but when I see this kind of donuts, it makes me want to eat one.
No podía faltar el famoso ganache de chocolate, lo utilizamos para cubrir los bastoncitos, por eso el color y brillo diferente. Gracias a este accidente, hizo que muchas cosas en la pastelería cambiaran y hoy en día siempre se acude a la ganache, cuando queremos que la preparación suba un siguiente nivel, con una simple mezcla de crema y chocolate. Eso es algo que me encanta de la pastelería, las cosas más sencillas, pueden cambiarlo todo.
We could not miss the famous chocolate ganache, we use it to cover the sticks, that's why the color and different brightness. Thanks to this accident, many things in the pastry industry changed and nowadays we always use ganache when we want to take the preparation to the next level, with a simple mixture of cream and chocolate. That's something I love about pastry, the simplest things can change everything.
Una de las cosas que me encanta de la pastelería, es poder utilizar las diferentes técnicas en una sola receta. Mezclar técnicas de diferentes países y crean nuevas combinaciones de sabores, aromas y texturas. Quizás sea yo que me encanta esto, pero el poder descubrir diferentes combinaciones y salir de lo tradicional, me hace querer seguir aprendiendo las bases de la pastelería, para poder crear cosas nuevas, pero siempre respetando los orígenes que tanto nos han dado hasta el momento. ¡Hasta un próximo post de cocina!
One of the things I love about pastry is being able to use different techniques in a single recipe. Mixing techniques from different countries and creating new combinations of flavors, aromas and textures. Maybe it's me that I love this, but being able to discover different combinations and go out of the traditional, makes me want to continue learning the basics of pastry, to create new things, but always respecting the origins that have given us so much so far.
