Vegetarian mini sandwiches homemade.

A friendly greeting dear Hivers, it's my first time in this rich community and I am very happy. For days I wanted to share with you on Club of Sandwiches, but I was waiting for the right day to make some tasty sandwiches at home. My life partner is a vegetarian, so we are always preparing delicious food based on vegetables, greens and legumes.

The community where we live is very small, it is a rural area where there are only two bakeries, the whole wheat bread is delicious in both, the difference is that in one the bread is smaller than in the other. This time we bought the small whole wheat bread to make mini sandwiches, filled with lentil croquettes, vegetables, egg and cheese.

I grilled the lentil croquettes, cheese and onion, until everything took a beautiful golden color.

While those ingredients were browning, chop the tomato into slices and the cilantro finely.

I took the bread and opened it in half and the fun began. I put the lentil croquettes on top of the opened breads, with a touch of homemade smoked paprika sauce on top.
