This is a traditional Polish dish, Gołąbki is basically mince and rice wrapped in cabbage, a Polish guy once described Pierogi as Russian Ravioli, mine has mince and wild mushroom, this is a perfect dish for anyone missing Poland after steemfest. I made one big pot of wild mushrooms and mince, I first made the Pierogi and the left over mince I mixed with rice.
Mince ingredients
400g Soya mince
Two handful of dried wild mushrooms
3 onions
7 garlic cloves
1 teaspoon yeast extract
1 teaspoon ground coriander
1 teaspoon salt
2 teaspoons flour
1/2 a cup of plant based milk
So first thing is to cook the mushrooms
Some salt
About 500ml water
Cook for 15 minutes, keep the water from mushrooms as a stock, chop up the mushrooms, onions and garlic
Lightly oil and fry the mushrooms
In goes the onions
Garlic
Then the mushroom stock
A teaspoon ground coriander
A little extra water just to cover it, and then the Soya mince goes in, and it is made from organic soya
Then let it simmer for 15 minutes, mix 2 teaspoons flour with plant based milk
Pour it in
Then a teaspoon yeast extract, keep on mixing for a few minutes and switch off.
To make the pierogi dou, it is just flour with a pinch of salt and gradually add boiling water while mixing it up
I used 600g flour
Then just added in boiling water and started mixing
Adding more water
And mixing
Brake a piece off
Roll it flat
Some thing round and cut them out
Then it is just a matter of putting a little mince in and folding them
To cook them you just boil water and dunk them in
Once they float they are cooked
They are meant to be fried but I baked them instead
Some onions
Pierogi
I made some bacon bits, vegan of course
Pour in the bacon bits
And give a little mix
To make the gołąbki you need to steem the cabbage leaves so they don't break
Then just add some rice to the mince
Mix up and place on the cabbage leave
Roll up
Place in a baking tray
Then to make a tomato sauce
chop up some onions and garlic
Saute onions
Garlic
Two cans of tomato and fresh chopped basil
Pinch of pepper and salt
Pour the tomato sauce over the cabbage rolls
Put both pierogi and gołąbki in the oven for 45 minutes at a medium heat and there you go
