In this post, I'd like to share a recipe for crispy deep fried morning glory salad. If I were in Thailand, It is easy to purchase glory morning but it is not in Japan. I was lucky I found it out at the supermarket near my place. I often cook stir morning glory with oyster sauce. But I think I should cook the different dishes that I've ever made before. This dish is my favorite dish.
Serves: 1-2 people
Ingredients
1.Morning glory, 5
2.Tempura flour, 150 grams.
3.Coldwater, 300 ml.
4.Cashew nut, 2 tablespoons.
5.Fired onion, 1 tablespoon.
6.Shrimps, 7-8
7.Minced pork, 100 grams.
8.Sugar, 2 tablespoons.
9.Lemon juice, 1
10.Fish sauce, 1 tablespoon.
11.Red chili, 3-4 pieces (You can add more if you want)
12.Coriander, 1
13.Red onion, 2 tablespoons.
14.Green onion, 1 teaspoon.
15.Frying Oil, 200 ml.
Preparation Method
1.Cut morning glory about 2-inch lengthwise and set aside.
2.Coat cut morning glory with tempura flour and fry in a pan.
3.Boil shrimps and minced pork and set aside in a bowl.
4.Chop red chili and red onion and set aside in a bowl.
Directions For Cooking dipping sauce.
1.Put sugar in the bowl and add lemon juice and mix together until sugar is dissolved.
2.Add fish sauce, cut red onion, cut red chili, cut green onion, and cut coriander.
3.Add boiled shrimps, boiled minced pork and cashew nut and mix them together.
4.Serve dipping sauce with crispy fried morning glory.
If you don't have morning glory, you can substitute with whatever you like such as mushroom, carrot, and okra.
