Homemade Healthy Snacks Series - #11 Crunchy Date & Ginger Semolina Cookies (No Sugar) - An Original Recipe


Today I decided to get creative with the semolina, and happily these have such a satisfying crunchy texture!  The dates and honey give all the sweetness needed so, as with all the snacks in my Homemade Healthy Snacks Series, these contain no sugar or harmful ingredients (especially if you're able to get organic ingredients).  They are perfect for anyone who is trying to stay in good health, or lose weight, or for the kids to snack on at home and school.  This recipe is easy enough for them to help make it, and fun too as they can use their hands and really get stuck in!


What you will need: (makes about 24)

100g bran flakes/corn flakes  

75g dates  

3 tblsp coconutoil/avocado oil/butter  

4 tblsp honey  

1 egg  

100g semolina  

2 tsp ginger  


Method:

In a large bowl crush the bran or corn flakes using a rolling pin or something similar 



Chop the dates up finely and add to the bowl 



Add the (melted) oil or butter, honey and egg to the bowl and mix thoroughly (I squished it all together with my hands) 



Add the semolina and ginger to the bowl and mix again until you have a lovely sticky mixture 



Roll into small balls in your hands and flatten into cookie shapes, then lay them on an un-greased baking tray 



Bake in a preheated oven at 190 degrees Celcius for 15 minutes, then allow to cool on a wire rack
