Vegan salad today and a sweet potato lasagne yesterday. This week sure started well in the food department.
A small coffee shop (Renaa Xpress) in my hometown, Stavanger, makes this yummy vegan salad.
It contains beets, pumpkin, cauliflower, greens, quinoa, grapes and almonds. The dressing is some kind of vinaigrette with olive oil and lemon I think.
It’s the perfect combo of soft and crispy.
What’s you favorite salad?
My favorite is one I tasted in Cape Town.
It was a salad made with green apples, shredded beets, crumbled chèvre, creamy balsamic and spinach. Yum!!!!!
