I tried to make one of the recipes from the Alcántara Monastery library. Normally this recipe is made with cod fish. However, I used Salmon. I prepared it with garlic and almond emulation, toasted almonds and egg yolk. In 1807, the soldiers of General Napoleon Bonaparte, under the command of General Jean-Andoche Junot, destroyed the Alcántara monastery library. A soldier found the recipe for which the priests wrote down the recipes and gave it to General Jean-Andoche Junot. When the General's wife, Laure Permon, returned to France, she spread these recipes to the aristocracy of Paris in collaboration with chef Careme. He declared himself as the author of the recipes. A century later, Auguste Escoffier claimed that these recipes were the only advantage ′′ France took from that war ′′.
