Do you love eating oysters and sea urchins!? If yes, then this post is for you!
If you have the opportunity to visit Mauritius one day, I highly recommend that you try our local oysters and sea urchins - I won't say they are the best in the world...but the taste is really special and very delicate!
In many hotels and couple of restaurants in Mauritius, you will find these delicacies to enjoy fresh...
In hotels, this is how normally you'll find the oysters and sea urchins displayed on ice with some fresh algae as decoration, on buffets.
The Mauritian oysters are small in size, but so tasty! I know a man who is working on having them much bigger...
Some like it simply with some fresh lemon or tabasco, while others enjoy them with a shallot vinegar.
What's your way of eating oysters?
Couple of years back I was making beignet with oysters and deep fried...was a favorite on our menu!
Sea urchins are also mostly enjoyed with fresh lemon and tabasco...though these days they are also super famous on sushis!
It's a trend these days!
Having worked with these products for quite long now, my preferred way of serving the local oysters, is to make a nice crunchy granny smith apple salad, with a lot of fresh citrus inside and mix the oysters in.
And for the sea urchins, I actually have 2 preferred ways...
When served raw, I love to add green mango or green papaya salad in the shell and mix, then enjoy.
Sea urchin can be magical when cooked too...try making sabayon with them, a pleasure for the palate on a nice pasta dish...
