Hello Again,

I had this cake bought for me yesterday. I do love cake and I really enjoy a fruit flavoured on even more so than chocolate. Mary Berry is known for her baking, so I was looking forward to eat this cake as I already knew this had to be good.

Mary Berry's Raspberry Ripple Cake

Vanilla sponge filled with raspberry jam, topped with cream cheese frosting and finished with raspberry jam and raspberry pieces.

When I first saw this I thought it was a Victoria sponge. I was looking for the buttercream in the middle, but there wasn’t any. Never mind, I was still sure this was going to be a nice cake. When I cut into the cake, it was very soft, spongy and light. The top of the cake had a cream cheese frosting with drizzled raspberry jam and dried raspberry pieces. The filling was raspberry jam. I thought the cake didn’t have enough frosting as there wasn’t any buttercream. Once I started eating the cake, I realised I wasn’t at all missing the buttercream. There was enough jam in the middle and cream cheese frosting and jam on top to go with each mouthful, The cream cheese did taste a little bit like buttercream and the sponge was so good and airy. I loved it.

The box says serves six. It definitely doesn’t serve six. My husband had a quarter and that looked really small for a serving. I on the other hand had the remaining three quarters. The cake was so good! I know I’m a pig when it comes to sweet foods, but this one went down so easily. It was so fruity and light. I would eat this again for sure.
