Good morning my friends and I wish you to have a beautiful and healthy week, let’s start our week with a delicious omelette, what do you think??? Let’s do this

Ingredients

8 eggs, preferably organic
250 ml milk
2 teaspoons soup flour, for all uses + a little more for the pan
200 gr. gruyere, grated
80 ml olive oil + a little for greasing the pan
700 gr. cherry tomatoes, preferably cherry, cut in half
10 - 12 olives, preferably Kalamon, seedless, finely chopped (optional)
2 teaspoons soup fresh thyme, chopped (fresh thyme is now found in quite large supermarkets) or 1 tsp. thyme soup dried, grated
Salt Pepper

Preparation

Preheat the oven to 180 ° C. Lightly grease a medium baking tray and sprinkle with a little flour.

In a deep bowl, beat the eggs with the whisk until fluffy. Add the milk, flour, oil (which will give extra flavor to the food), gruyere and salt and pepper and continue stirring with a whisk, until the ingredients are mixed.

Pour the mixture into the pan, evenly scatter the cherry tomatoes, olives (if you put), sprinkle with thyme and bake for about 25-30 minutes or until the mixture sets, the omelette turns brown, but also from below (the check by lifting it with a spatula).

Unbake, leave to cool a bit and serve with fresh cucumber salad and toast.
