THAI CHICKEN & WILD RICE SALAD

It is pleasure to impress you today with a specially selected recipe of Thai chicken and wild rice salad. 

But before I proceed, let me forewarn you to be cautious of how you admire this spectacular rice dish as you may be tempted to devour the entire dish all at once 😁 🤓

Yes, the potential sweety-problem of preparing this rice dish is that you won't even remember to share the dish with whomever that happens to be around you at the time of its preparation 😃

Trust me - this is the recipe for you and I mean it when I say "Trust me". 

Green Thai chicken and wild rice salad is a special dish that involves a bowl piled up high with spiced cooked wild rice, edamame, rice noodles, sliced vegetables, diced chives, spicy-fried chicken and spicy-herb cream dip. 

SuperYummiliicciiooussss - Yeah, that’s my line of thought on this dish.

A combination of the necessary ingredients, cooked up in an appropriate manner and garnished with fresh nutritious vegetables turned out to be a drooling and addictive main meal that you may never want to stop feasting on. But before you try this recipe, do not tell anyone that you were not forewarned 🙈 😀 🤣

What I am saying literally is that this dish is too good to be ignored! It is not only delicious but packed with assorted fresh colourful vegetables that are loaded with essential vitamins and minerals that needed for the healthy functioning of your body.

This recipe incorporates the right amount of fresh vegetables to enrich and boost this amazing meal. I chose this recipe because it is pretty simple and yet the final outcome is superb. Apart from the wild rice that takes longer time to cook, every other part is quite quick and easy. This rice meal is such an healthy option because it is filled with the right nutrients required for a healthier YOU!!!

Prep Time: 10 Minutes

Cook Time: 50 Minutes

Total Time: 60 Minutes

Ingredients:

  • 1⁄4 tsp salt
  • Fresh lettuce
  • 1 lemon (juiced)
  • Fresh rocket leaves
  • Fresh parsley leaves
  • 1 pack of rice noodles
  • Fresh chives (chopped)
  • 2 carrots (spirally sliced)
  • 1 cup short grain wild rice
  • 1 tablespoon mint dressings
  • 1 flavoured cooked chicken breast
  • 2 cooked beetroots (spirally sliced)
  • 4 teaspoon chicken sauce cream mixed with dry chives leaves
  • 1/2 cup Edamame (steamed with salt and drained)

Instructions:

  1. Add the rice noodles in a clean pot containing boiling water.
  2. Allow to cook for 3 minutes, don't let it get softened.
  3. Pour noodles in a strainer to drain water (set aside).
  4. Wash and add the wild rice in a pot of boiling water and add salt.
  5. Stir rice and allow to cook until rice is tender then drain excess water from the rice (set aside).
  6. Meanwhile, blend the cooked chicken breast with the broth, add in a clean bowl, add olive oil and mix well.
  7. Assemble the salad
  8. edamame, carrot, beetroot, chives, lettuce and rocket leaves and add in a bowl.
  9. Drizzle with olive oil and lemon juice then toss properly.
  10. Then add the salad in a dishing plate, add the wild rice and rice noodles and serve immediately.
  11. Garnish with the blended chicken sauce and the mint dressing
