Lean Green Avocado Egg Salad 🥑🍳

This Avocado Egg Salad is my favorite for breakfast or a quick lunch. So simple, yet so yummy!

I'm sure you're going to love this too!

You remember that avocado toast and those tiny egg sandwiches that you get at afternoon teas? If you've ever had those, you'll know what I'm referring to. This Avocado Egg Salad is the perfect love child of the two! 😍

Personally, ever since I've swapped butter or the classic mayo on my toast for lemony, creamy avocado 🥑, there's been no looking back.

You can load this tasty salad on a thick slice of bread (home-baked sourdough is my favorite!) or just dig in with a fork!

I can't stress enough how good avocados are for you. They keep your heart healthy, skin looking plump, give you stronger nails, shinier hair, and the fat content will satisfy the biggest of cravings.

Eggs, as we all know are a rich source of protein, and full of vitamins.

Eggs and avocados together make a winning combo!

To serve two, you'll need:

4 free range eggs

2 small avocados or 1 really big one!

Fresh juice of 1 lemon

Salt and Pepper

How it's done:

Place your eggs in a saucepan and cover them with cold water. Put the pan on high heat and as soon as the water comes to a boil, pop the timer on for 10 minutes. (Or you can boil the eggs as per your proven method)

While you're waiting for the eggs to boil, mash or blend you your avocado with lemon juice, salt as per your taste and a little pepper.

I use my MagicBullet for this but you can simply use a fork if you'd prefer the avocados a little chunkier.

Once your timer goes off, drain the eggs carefully and fill the pan with cold water.

Let the eggs cool off a bit before you start peeling them.

To peel, tap the sides of the eggs and roll gently. This way the shell comes off easily.

Now, slice and cube your eggs.

Toss them into a bowl.

Mix eggs with your prepared avocado cream.

Serve as you please.

Since I love all things spice, I sprinkle chilli flakes over mine. You could also use paprika, herbs or anything of your choice.
