Caramel Apricots with Blue Cheese

The most delicious summer salad - a combination of caramel, juicy fruit, acute arugula and spicy cheese, it's worth a try! Use the richest and fragrant apricots, also it will turn out perfectly with peaches and figs.

Ingredients:

cheese with blue mold Royal Chees - 50 g
apricots (figs, peaches) - 3-4 pcs.
arugula - 50 g
brown sugar - 2 tsp.
butter - 1 tsp.
lemon juice - 1 tsp.
hazelnut fried - handful
salt, freshly ground black pepper

Preparation:

Melt the butter with sugar in the pan, put the halves of the fruit downwards and fry for about a minute, make sure that the caramel is not cooked, otherwise it will be bitter. Nuts chop large. Rukkola wash and dry, salt and season with lemon juice. On top, lay out halves of apricots, crumble cheese, sprinkle with nuts, pepper, pour the remains of caramel. Such a salad can be a light snack to wine or an original breakfast combined with coffee.
