How to Make Delicious Banana & Choclate Chip Muffins - Gluten Free Recipe!

Hello Steemit Friends! It's Saturday and time for some amazing muffins!
These are great for when you have a few old bananas lying around.

1/3 Cup real butter, room temperature
1/2 Cup light brown sugar
2 Large eggs
1 1/2 Cups mashed ripe bananas, about 3 medium Bananas
1 1/2 Cups One to One Gluten Free Baking Mix by Bob's Red Mill
(If you are not allergic to gluten, feel free to use your regular brand of flour, however
Gluten Free version may be healthier for you)
1/4 teaspoon baking soda
3/4 tsp. ground cinnamon, optional
1/4 tsp. ground nutmeg, optional
1/2 cup semisweet chocolate chips
A few spoons of confection powder sugar and granulated sugar
for sprinkling on top, after it has cooled completely!

Preheat the oven to 375°F.

Spray or grease 12 muffin cups.

In a large bowl, stir together the soft butter and sugar.

Add the eggs and mix until well blended.

Add the mashed bananas, baking mix, baking soda, cinnamon,

and nutmeg, mixing until blended.

Stir in the chocolate chips.

Scoop the batter into the greased muffin cups, they should look like this....

Let it rest about 7 - 8 minutes before placing in oven.
This helps the batter rise and make a fluffier muffin!

Bake for approx. 18 minutes or until it's golden brown on top.

Let them cool off then sprinkle powdered sugar on top & Enjoy!

This version below is the same recipe except I added about a cup and a half of chopped walnuts!

They are great with or without the walnuts!
The chocolate and banana together are it though!
