Baked eggplant with Arturo's Salad

Good morning my guests, welcome to a rich post more than "The Virtual Kitchen". This time I bring you two recipes, a rich eggplant batter that will be the garnish accompanied by a rich salad Arturo's style, without more to say let's start with these rich recipes.

For the Eggplant:

• 1 large aubergine
• 1 clove garlic
• 4 tablespoons of bread crumbs
• 2 tablespoons grated cheese
• 1 teaspoon chopped fresh parsley
• Salt and pepper
• Mayonnaise to reboar

For the salad:

• 1 Kg of white cabbage
• ½ Kg of purple cabbage
• 1 large carrot
• 10 large spoons of mayonnaise
• 1 teaspoon ground cinnamon
• 2 teaspoons of sugar
• 1 teaspoon of mustard
• ¼ teaspoon nutmeg
• 1/3 cup of water
• 1 finely chopped garlic
• Salt to taste

Preparation of the salad:

Let's start with the dressing. In a bowl place the mayonnaise, walnut, cinnamon, sugar, mustard, chopped garlic, salt and water. Mix and store in the fridge.

In a bowl place the finely chopped cabbage and the grated carrot thick.
In a bowl, mix the dry ingredients with the dressing. Keep in the refrigerator you have cooled.

Preparation of Eggplants:

We will preheat the oven to 200 °. We will cut the eggplant in slices without removing the skin since the nutrients are there. That the slices are not too thick; put the slices on a tray and sprinkle the salt. We reserve
While we put garlic, parsley, bread crumbs, cheese, salt and pepper in the mincer (or by hand with a knife). We chop everything and put it on a plate.

Dry the slices of aubergines, spread them on both sides with the mayonnaise and overflow with the previous preparation: we are placing them on the baking tray on baking paper or aluminum foil.

We bake for 30 minutes; at 15 minutes we turn them over so they look good on the other side. (It may take more or less, you have to be aware).

Simple and interesting recipes to make, for those who are not Venezuelans in our country there is a food chain called Arturo's, style K.F.C and their salad is the richest (their chicken too, but I love the salad more).
