Water spinach salad recipe.
Ingredients.
- 1 bunch of water spinach (use stems only).
- 1/2 pound of shrimp (shelled, deveined and cut into 2 pieces).
- 1/2 pound of squid.
- 1 Galanga roots (cut into julienne).
- 1/4 cup vegetable oil.
- Fish sauce, sugar, fresh lime juice and salt.
- Ice cubes.
- 5 cloves garlic (finely chopped).
- Chilli and vegetable oil.
Instructions.
- Prepare the water spinach: Cut the water spinach in halt, cut off the wilted part, and use the fresh part. Rinse well with cool water.
- Prepare the cool water bowl: Combine the cool water with 1 tablespoon fresh lime juice and ice cubes in the bowl (just to keep the stems green and crunchy). Very thinly slice the water spinach with a knife. Soak the water spinach in cool water bowl you've just prepared at least 20 minutes. Put it into a basket to drain.
- Meanwhile: Prepare squid, rinse well, removing inedible portions and cut the squid. Boil water to cook a squid for about 2 minutes. Put it into a bowl to drain. Set aside.
- Prepare shrimp: Heat oil in the pan, add shrimp and stir fry well until the flesh is totally pink. Then, put it into a bowl.
- Prepare the sauce: Mix well 2 tablespoon boiled cool water with 2 tablespoon sugar, 4 tablespoon fish sauce, 2 tablespoon fresh lime juice, chilli and garlic.
The important thing is that taste the sauce (sweet and sour). Add fresh lime juice and sugar to taste.
- Mix the salad: Add soaked water spinach, stir fried shrimp, boiled squid, galanga roots, final step is add the mixed sauce. Mix well and set aside for about 5 minutes before serving.
