Guacamole Salsa - Guacamole Experiment, part 1 - Lori's Cookbook

I'm not a huge fan of avocado, but I know it's good for me, so when they were on sale at my local grocery store, I decided it was time to make friends and make a bunch of guacamole to figure out which one we would like best.

Here's the first recipe I tried, a cooked variety.

Guacamole Salsa

Boil for about ten minutes:

  • 5 tomatillos
  • 1-2 hot peppers

I used serrano peppers as I'm not huge on heat.

Blend:

  • the flesh of 2 avocados
  • cooked tomatillo/pepper mixture
  • cilantro if you like it (we don't)
  • 1/2 T garlic powder (or 1 clove garlic)

Serve as a dip with pork rinds and/or tortilla chips, or use in taco salad.

I liked this guacamole, but it wasn't my favorite. I think I would use it when I needed to cook the tomatillos for whatever reason. Maybe if I didn't have a blender, I might use this one with a food mill or masher.
