Madeleines with Chocolate 5 spices

Looking for madeleines? You're right on time. I propose you a delicious recipe, rich in chocolate.
While surfing the net, I found many recipes that contained a lot of cocoa but in the end very little chocolate. I wanted the opposite.

Here I got very good madeleines, light and tasty. Hair what we wanted!

Madeleines with Chocolate 5 spices
Ingredients for 30 to 35 Madeleines
2 eggs (110 g without shell)
80 g of powdered sugar
1 tbsp. honey
80 g semi-salt margarine (or butter)
110 g milk chocolate 5 spices brand Repère® 5 spices
80 g flour T45
5 g of chemical yeast
20 g unsweetened cocoa
Madeleines with Chocolate 5 spices
Break the chocolate into pieces and melt it with the margarine. Reserve.

Sift flour with yeast and cocoa.

In a bowl, whisk eggs with sugar and honey for 2 minutes.

Add the flour, yeast and cocoa mixture. Whisk well with a whisk.

Finally, add the chocolate/margarine mixture and mix well to obtain a smooth and homogeneous dough.

Store in the refrigerator for 2 hours.

Preheat oven to 220°C.

Fill the madeleine fingerprints with a bag or soup spoon. Do not overfill the fingerprints (or moulds) or it will overflow.

Cook the madeleines for 5 minutes at 220°C. Lower to 180°C and cook for 8/9 minutes longer.
