11pm and I decide to bake a Cinnamon Loaf 🤩 and it’s EASY AND DELICIOUS!

I left the glaze off for now but it’s included in the recipe below. And you could add apple slices or blueberries or both and it would be gorgeous!

INGREDIENTS

FOR THE BREAD
*2 CUPS all-purpose flour.
*1 CUP Almond milk.
*1/2 CUP White sugar.
*1/3 CUP greek yogurt/sour cream.
*1 TABLESPOON baking powder.
*2 TEASPOONS vanilla extract.
*1/2 TEASPOON salt.
*An egg at room temperature.

FOR THE SWIRL
*1/3 CUP White sugar
*2 TEASPOONS cinnamon powder.
*2 TABLESPOONS melted butter and cooled slightly.

TO MAKE A DELICIOUS HOMEMADE GLAZE
*1/2 CUP powdered sugar
*3 TEASPOONS milk, as needed.

THE METHOD
*Step 1-Preheat oven to 350 degrees F, (180 Celsius) and spray a loaf pan with a non-stick cooking spray.
*Step 2-Whisk all the dry ingredients: flour-baking powder-salt-sugar( In a small bowl).
*Step 3-Whisk the egg, with the almond milk, vanilla, and yogurt/sour cream together in a large bowl. To the egg mixture, add the flour mixture, stirring with a spoon just until incorporated. Pour the batter into the prepared loaf pan. (I lined with baking paper)
*Step 4-In a medium bowl, mix all the ingredients for the Swirl. Place the teaspoonfuls on top of the bread, then swirl it into the batter a few times with a knife.
*Step 5-Bake for 50 minutes to one hour, still checking with a toothpick.
*Step 6-Remove from the oven and cool down on a wire rack for 20 minutes in the pan. Take the bread from the pan and cool it on the rack completely.
*Step 7-To Make the Glaze, whisk all the ingredients together until smooth in a small bowl, adding a spoon of milk at a time until a reasonable quality of drizzling is achieved.
When the bread is absolutely cold, drizzle the glaze over it.
