Ingredients

🥩 3 pieces New York steak or sirloin or tenderloin
🧄 2 cloves minced garlic
🍶 Worcestershire Sauce Salsa Inglesa to taste
🥄 1 teaspoon mustard
🌶️ 1/2 teaspoon black pepper
🧂 1.5 teaspoons salt
🧈 Approximately 2 tablespoons butter for browned butter
🌾 1 tablespoon all-purpose flour
🍷 1/4 cup red wine
🥛 1/2 cup sweet cream or milk
🍄 1 container 8-10 oz fresh button mushrooms, sliced
🍬 1 tablespoon sugar
🧅 2 medium onions, sliced into julienne strips
🫒 Oil for frying optional, if opting out of butter


Instructions

1- Marinate the Steaks:

  • In a glass bowl, combine minced garlic, Worcestershire sauce, mustard, salt, and pepper to create a marinade.
  • Coat the steaks thoroughly in the marinade and set aside while preparing other ingredients.

2- Caramelize the Onions:

  • In a medium pan, sauté julienned onions over medium heat until they become soft and a caramel color.
  • Set aside.

3- Sear the Steaks:

  • Preheat the large Onyx frying pan on high heat.
  • Melt a small amount of butter until it smells nutty noisette stage.
  • Place the steaks in the pan, searing one side without moving them.
  • Once juices pool on the surface, flip the steaks and cook to desired doneness.
  • Remove from the pan and allow to rest.

4- Prepare the Mushroom Sauce:

  • In the small Onyx frying pan, melt a small amount of butter, then add the flour to make a roux. Stir with the red silicone spatula until golden.
  • Pour in the red wine, allowing the alcohol to evaporate.
  • Add cream or milk and sliced mushrooms, stirring until the sauce thickens slightly.
  • Season with sugar, salt, and pepper to taste. Cook until mushrooms are tender and sauce is well-combined.

5- Plate and Serve:

  • Place the rested steaks on a serving plate.
  • Spoon the mushroom sauce over the steaks, then top with caramelized onions.
  • Serve alongside arroz arregladito rice with peas and corn and a green salad with tomato slices.
