Ingredients
🌽 6 ears of fresh sweet corn
🧈 1 stick of unsalted butter, melted (113g or 1/2 cup, Brand not specified)
🍚 1 teaspoon granulated sugar
🧀 Shredded mozzarella cheese (Brand not specified)
🍃 Several large pieces of banana leaves
💧 Water
🥄 Salvadoran cream (Brand not specified, for serving)
Instructions
1- Prepare the Corn:
- Remove the husks and silks from the corn ears.
- Using a sharp kitchen knife, carefully scrape the corn kernels into a red mixing bowl.
- Submerge the corn kernels in water in another bowl, then agitate by hand to eliminate any remaining silks. Transfer the cleaned kernels to a separate container.
2- Prepare the Banana Leaves:
- Cut banana leaves into squares for wrapping.
- Warm a griddle or comal on medium heat. Warm the banana leaves until they soften and change to a darker green, preventing breakage during wrapping.
3- Prepare the Corn Mixture:
- Blend the cleaned corn kernels in a personal blender.
- Add melted butter and granulated sugar to the blender, blending until achieving a thick batter consistency. Pour into a yellow/light green mixing bowl.
4- Assemble the Riguas:
- Lay a warmed banana leaf flat. Spoon the corn mixture onto the center, forming an oval or circle.
- If desired, create a well, adding shredded mozzarella cheese within.
- Fold the leaf over the mixture, flattening lightly.
5- Cook the Riguas:
- Place on a preheated griddle/comal.
- Cook until the banana leaf becomes golden-brown (about 1-2 minutes), then flip and repeat.
- Continue until all riguas are cooked (approximately 8 from 6 ears of corn).
