Instructions

1- Prepare the Corn:

  • Warm a griddle or comal on medium heat. Warm the banana leaves until they soften and change to a darker green, preventing breakage during wrapping.

3- Prepare the Corn Mixture:

  • Blend the cleaned corn kernels in a personal blender.
  • Add melted butter and granulated sugar to the blender, blending until achieving a thick batter consistency. Pour into a yellow/light green mixing bowl.

4- Assemble the Riguas:

  • Lay a warmed banana leaf flat. Spoon the corn mixture onto the center, forming an oval or circle.
