Ingredients

Instructions
1- Soak the Fava Beans:
- Rinse 2-3 cups of baby fava beans.
- Place the beans in a bowl and cover with cold water.
- Let them soak for at least 2.5 hours, or preferably overnight in the refrigerator.
2- Prepare the Ingredients:
- Dice the onion and tomato and mince the garlic.
3- Cook the Fava Beans:
- In a stainless steel pot, combine the soaked fava beans, diced onion, tomato, and minced garlic.
- Add water until the beans are fully submerged.
4- Simmer the Beans:
- Place the pot on an induction cooktop and bring it to a gentle simmer over low heat.
- Cover the pot and cook for approximately 4 hours, stirring occasionally.
- Ensure that the liquid level remains sufficient, adding more water if necessary.
5- Mash the Beans:
- Once cooked, the beans should naturally mash with stirring.
- For a smoother texture, use a large spoon or ladle to mash them further in the pot.
6- Enhance Flavor:
- Stir in 2 tablespoons of extra virgin olive oil and lemon juice to enrich the flavor.
- Season with salt.
7- Serve:
- Spread a lettuce leaf on each plate and scoop a generous portion of Ful Medames onto the leaf.
- Surround with pita bread triangles, halved cherry tomatoes, and mixed olives.
