Ingredients
🥩 600 g (21 oz) beef, cubed
🧅 100 g (3.5 oz) onion, finely diced
🧈 30-45 g (1-1.5 oz) butter
🌶️ 1-2 tsp paprika
🌶️ A few generous sprinkles of ground pepper
🧂 A few generous sprinkles of salt
🥣 500 ml (0.9 pt) beef broth
🌾 50 g (1.8 oz) plain flour
🥛 150 ml (0.25 pt) heavy cream
🥄 A small amount of sour cream for garnish
🌿 Fresh herbs for garnish
🧅 Thin slices of caramelized onion for garnish
Instructions
1- Prepare the Ingredients:
- Start by peeling and finely dicing 100 g of onion.
- Cut 600 g of beef into uniform 1-1.5 inch cubes.
- Season the beef cubes generously with ground pepper and salt.
2- Caramelize the Onions:
- On a CERAM induction cooktop, place a stainless steel saucepan.
- Melt butter over medium heat.
- Add diced onion and sauté, stirring frequently, until the onion turns a deep caramelized brown.
- Add more butter if needed to aid in caramelization and prevent burning.
3- Brown the Beef:
- Add the seasoned beef cubes to the saucepan with the caramelized onions.
- Stir and cook until the beef is browned on all sides and develops a rich crust.
4- Add Paprika and Broth:
- Stir in paprika, ensuring it coats the beef thoroughly.
- Pour in beef broth, ensuring it mostly covers the beef.
5- Simmer:
- Bring the mixture to a boil.
- Cover the pot with a metal lid, reduce the heat, and let it simmer for 1.5 to 3 hours, or until the beef becomes tender.
6- Thicken the Sauce:
- Once the beef is tender, add plain flour directly to the simmering liquid and whisk to avoid lumps.
- Pour in heavy cream and whisk again, allowing the mixture to come to a final simmer and thicken.
7- Strain the Sauce:
- Using a fine-mesh sieve, strain the sauce into another pot or bowl, pressing with a spoon to extract all the liquid for a smooth texture.
