The midday sun beat down on the small courtyard in Uyo, but under the shade of the mango tree, the mood was light. Eti-eno stood at the wooden counter, her focus entirely on the culinary masterpiece unfolding before her. Isaac sat nearby, leaning forward, his eyes tracking her every movement with playful intensity.
"You are overthinking it, Eti," Isaac teased, though his mouth watered. "It’s just a sandwich."
Eti-eno laughed, shaking her head as she meticulously layered thin slices of vine-ripened tomatoes over the crisp lettuce. "Isaac, if you’re going to eat a sandwich in my kitchen, it’s not going to be 'just' a sandwich. It’s an experience."
She reached for the garnish—a vibrant mixture of finely diced red onions, fresh parsley, and a secret pinch of toasted black pepper. With the precision of an artist, she sprinkled the garnish across the spread, ensuring the flavors would bloom with every bite. The contrast of the bright greens and deep reds against the golden, toasted bread was enough to make anyone hungry.
As she pressed the top slice down and performed a swift, clean diagonal cut, the aroma of fresh herbs filled the air. She slid the plate toward Isaac, who looked at it with newfound respect.
He picked up a half, took a deliberate bite, and let out a soft sigh of appreciation. The crunch of the toast gave way to the vibrant, seasoned garnish. "Okay," he admitted, smiling at her, "I stand corrected. This is definitely not just a sandwich."
Eti-eno grinned, picking up her own plate. "I told you."
