It does take 2 days to make. I wasn't waiting long enough for the starter to be strong. Then not proofing on the counter long enough either; that made for many failed loaves. Now I've got it down!

Sourdough bread literally takes two days to make. Patience is key for sure!

It has been so challenging to get a good loaf to be airy. The first dozen were always too dense. Once I let it proof longer on the counter, usually 5-6 hours before final shaping and I could see bubbles

Sourdough starter does take a long time to be just the right strength, I almost gave up, lol.

Thank you. My husband has already promised to be a good patient and not try to drive me too crazy. A full knee replacement, though, should keep me pretty busy. Enclosing the porch keeps the wind and snow
