That is a great way to keep the zucchini, I have yet to do some in the dehydrator. Perhaps next year when I get more I will do so. Everything gets so tiny once it is dry, but a lot less storage space needed.

Larry looks so content! It is interesting that both of us have had a poor squash harvest this year. Between the voles and the mildew I only got a few and the sweet meat tasted nasty when I cooked it down.

They are tasty and I ended up starting new plants in late July just to get a harvest since my first ones didn't do much. I still have one plant flowering in the garden. I just might get a couple more zucchini,
