🐟 1 kg fresh sprats, cleaned heads and guts removed
🧂 4 tablespoons sea salt
🍭 4 teaspoons sugar
🌶️ 12 pieces whole allspice
🌿 12 pieces whole cloves
🌱 12 pieces juniper berries
🌶️ 2 teaspoons whole black peppercorns
🌿 2 teaspoons whole coriander seeds
🌾 1 teaspoon ginger powder
🍂 1 teaspoon grated nutmeg
🌿 1 teaspoon ground cardamom
🍂 0.5 teaspoon cinnamon powder
🍃 Bay leaves for layering
Instructions
1- Prepare the Sprats:
- Begin by carefully removing the heads and guts from the sprats. Rinse them thoroughly under cold water to ensure they are clean.
2- Create the Spice Mix:
- In a sturdy mortar, combine the whole allspice, cloves, juniper berries, black peppercorns, and coriander seeds.
- Grind these spices coarsely to release their full aromatic potential.
- Transfer the ground mixture to a mixing bowl, and add ginger powder, grated nutmeg, ground cardamom, cinnamon powder, sea salt, and sugar. Mix them by hand until thoroughly combined.
3- Layer the Sprats:
- Lay a bay leaf at the bottom of a clear, wide-mouthed glass jar.
- Roll each cleaned sprat in the spice mixture, coating it generously.
- Place the spiced fish into the jar, ensuring they are belly-up.
- Continue this process, adding a bay leaf after every third layer of fish.
4- Cure the Sprats:
- Place a smaller jar or a weight on top of the fish layers to press them down.
- Store the jar in a cool spot, initially outside of the refrigerator, for a few days to allow the natural brine to form.
- Once the brine covers the fish, remove the weight and store the cured sprats in the refrigerator for preservation.
