Chicken and Vegetable Rice
Hello, fellow readers of this great @hivefood community! I hope you’ve all had a wonderful day. Welcome to my blog.
Today, I’m stopping by this community once again to share a delicious and nutritious recipe for rice with chicken and vegetables—it turned out absolutely delicious.
Chicken and vegetable rice is a very well-rounded, affordable, filling, and easy-to-prepare dish—and very nutritious. You can eat it with banquet bread or slices of white bread. In my case, I had it with banquet bread and a glass of soda to cool off from the heat in my city. This dish is very versatile, and children, teens, and adults all love it.
You know, I made this recipe for a harvest festival we held at my parish to raise funds for various repairs to the parish house. I prepared eight kilos of rice with seven chickens; since it was a considerable amount, I asked my fellow parishioners for help with peeling, chopping, and washing all the ingredients for the green seasonings and vegetables (carrots). This dish sold for $3 per serving, and the quantities I’ve listed were enough for 55 servings. I’ll tell you that all the diners were delighted by the flavor, texture, and aroma—it was finger-licking good.
Now, I’ll list the quantities of ingredients and the step-by-step instructions for the final dish.
Ingredients
- 8 kilos of premium rice
- 7 chopped chickens
- 4 kilos of carrots
- 2 red bell peppers and 3 large white onions
- 10 heads of garlic
- 15 sweet chili peppers, 3 tablespoons of whole oregano
- 10 bay leaves
- 3 tablespoons of Worcestershire sauce, 3 tablespoons of soy sauce
- 2 kilos of green herbs (cilantro, leek, and celery)
- 3 Maggi bouillon cubes
- 1/2 liter of oil
- 5 tablespoons of yellow food coloring (Carmencita)
- 1/4 kilo of salt, 2 tablespoons of white pepper
- water (32 cups)
- 1 large pot for 10 kilos of rice.
Preparation
The first thing I did was remove the skin from the chicken and cut it into small pieces. I also washed and chopped the herbs and the carrot very carefully using all the necessary equipment.
Next, find a large pot, add the oil, onion, and garlic. Once the onion and garlic are translucent, add the chopped chicken, minced garlic, Worcestershire sauce, soy sauce, oregano, bay leaves, paprika, salt, sweet chili pepper, white pepper, and oregano. Sauté well, stirring occasionally. Then add the rice, the carrots cut into very small pieces, the yellow food coloring, and salt. I stirred it, covered the pot, and let it cook for 1 hour over low heat. At the end, to help it dry out better, I covered it with aluminum foil, let it sit for 5 more minutes, turned off the heat, let it rest, and plated it.
That’s all for this post—I hope you enjoyed it, and I’ll see you in my next post. Best regards.
