Ingredients

🥓 ½ lb thin pork slices, pork belly or shoulder
🍶 2 tbsp soy sauce
🍾 1 tbsp mirin
🥃 1 tbsp sake
🍬 1 tbsp brown sugar
🧄 1 clove garlic, minced
🫒 Cooking oil
🍚 Cooked rice
🌿 Scallions, chopped
🥚 Egg yolk

Instructions

1- Prepare the Sauce:

  • In a small stainless steel mixing bowl, combine 2 tbsp of soy sauce, 1 tbsp of mirin, minced garlic clove, 1 tbsp of sake, and 1 tbsp of brown sugar.
  • Mix thoroughly with a wooden spoon or spatula.

2- Simmer the Sauce:

  • Transfer the mixed sauce to a small stainless steel saucepan.
  • Bring it to a light boil over medium heat, then simmer for about 2 minutes.
  • Remove from heat and set aside.

3- Brown the Pork:

  • Preheat a frying pan over medium-high heat.
  • Add a small amount of cooking oil from a clear squeeze bottle and coat the pan.
  • Place the pork slices into the pan and brown them lightly on each side.
  • Once browned, remove the pork from the pan and set it aside.

4- Thicken the Sauce:

  • In the same frying pan, pour in the previously prepared sauce.
  • Bring the sauce to a simmer, stirring continually with a silicone spatula until it becomes glossy and slightly thickened.

5- Finish the Pork:

  • Return the browned pork slices to the pan with the thickened sauce.
  • Continue to cook, tossing the pork in the sauce until it caramelizes and adheres to the pork slices.

6- Assemble the Bowl:

  • In a ceramic serving bowl, place a portion of freshly cooked rice.
  • Arrange the sticky, caramelized pork slices neatly around the rice.

7- Garnish (Optional):

  • Garnish the bowl with chopped scallions.
  • Place an egg yolk in the center if desired.

8- Caramelize (Optional):

  • Use a kitchen blowtorch to carefully caramelize the pork in the bowl for a charred effect.
