For Easter Monday I like to show you how to make a
delicous carrot cake:
It is wonderfully juicy and without flour.
You need:
For the glaze:
Peel carrots and rub to fine grate rubs afterwards, which later come into the dough.
Mix the yolk with the brown sugar, then slowly add the oil. Add the juice of half a lemon and the teaspoon grated orange peel.
Now you can pick the carrots, right thereafter the almonds and the hazelnuts and the baking soda. If you want, you can now add the rum. (Not needed, but this makes the cake a little more delicious)
Beat the egg whites and a pinch of salt and lift under the carrot mass.
Now fill this mass into your shape of your choice (well-buttered) and bake at 160 degrees for about 45 minutes. This of course depends on the form you have chosen.
When the cake is chilled, you can mix the glaze.
Mix the sugar and the rum and put it on the cake.
